When it comes to weeknight meals I am all about keeping it simple, healthy and of course delicious! This recipe covers all those bases, and I bet even the picky eaters in your life will gobble this right up like mine did. My husband doesn’t even like broccoli and he loved this! I, on the other hand, am the opposite of picky and have yet to meet a quiche I didn’t like, but this is definitely one of my most favorite flavor combinations! So if you are racking your brain working on your meal plan for this week like I do at the beginning of every week, give this a try and I promise you won’t regret it! Pair it with a fresh green salad or mixed fruit and you are good to go!
Healthy Broccoli Cheese Quiche
Author: Megan Retherford Prep Time: 15 minutes Cook Time: 45 minutes Ingredients: Preheat oven to 375° 1 organic whole grain frozen pie crust (I found mine at Publix) 1 Tbs olive oil 1/2 bag frozen broccoli florets 1/2 onion (I used pre-diced frozen) 1 cup shredded colby cheese (or whatever you like) 4 whole eggs (I use Publix organic) 1/3 cup plain almond milk 1 tsp smoked paprika 3/4 tsp creole seasoning 1/2 tsp garlic powder 1/2 tsp kosher salt 1/4 tsp ground black pepper 1/4 tsp ground nutmeg 1/4 tsp ground mustard Method: Over medium-high heat sauté frozen broccoli and onion together with the olive oil and a dash or two of salt for 8-10 minutes until soft. Meanwhile beat eggs, almond milk, and seasonings in a bowl and set aside. Next, pour broccoli mixture into the pie crust and top with shredded cheese. Pour the egg mixture on top and pop in the oven for about 45 minutes checking on it periodically making sure not to burn the crust. If crust starts to get too brown you can cover it with aluminum foil. *I also like to place the pie crust on a sheet pan while baking.
